I doubt you guys were able to finish it in time for Noche Buena because this icebox cake needs a good few hours to set in the refrigerator. What a shame, since it’s so, so, so delicious!

Graham cake that doesn’t require baking is typically served at Christmas, but it also makes a delicious dessert when the weather is hot and you don’t want to turn on the oven.

Tips on How to Make Fruit Cocktail Graham Float:

To prevent the top cream layer from sticking to the film when covered, use a square baking dish that is deep enough for the several layers and has at least 1 inch of headspace.

In order to prevent additional liquid from leaking into the cake, make sure to thoroughly drain the canned fruit.

All-purpose cream from Nestle was what I used, but heavy cream will also work.

To ensure strong froth and excellent peaks, make sure the cream has at least 30% milk fat.

The cream and condensed milk should be very cold to achieve the most volume. The bowl and the beaters can alternatively be chilled for 20 to 30 minutes in the freezer.

Graham crackers can be substituted with digestive or broas (woman fingers) if you want.

Ingredients

Two 15-ounce cans of multipurpose cream
1 can (14 ounces) of chilled condensed milk
18 Graham cracker chunks
1 can (30 ounces) of well-drained fruit cocktail

Instructions

Condensed milk and all-purpose cream should be combined in a sizable basin. Beat the mixture with a hand mixer on low speed until it starts to thicken.

Increase the speed to medium and beat for roughly 8 to 10 minutes, or until the volume doubles.

Graham crackers should be arranged in a single layer on the bottom of an 8 × 8 dish. Break off pieces as necessary to fit the sides.

Spread 1/3 of the cream mixture over the graham crackers.

Stack some fruit on top of the cream.

Put more Graham crackers on top of the fruit.

Spread 1/3 of the cream mixture with a spoon. Stack more fruit on top.

Put the last graham cracker layer on top of the fruit. On top of the crackers, spoon and spread the remaining third of the cream mixture.

On top of the cream, arrange the leftover fruit cocktail.

Overnight refrigeration is recommended. Tightly wrap in plastic film. Before serving, freeze for around an hour.
